Vinification:

Von Hand gelesen und anschliessende Spontangärung im INOX Edelstahltank. Dieser Merlot wird in gebrauchten und neuen Barriquen ausgebaut. Seine »Un­plugged«-Weine werden, wie er es formuliert, »ohne jeglichen Schnickschnack, aber mit viel Gefühl für den Takt der Natur produziert«. Das heißt: keine Reinzuchthefen für die Gärung, keine Enzyme, keine Schönungsmittel und in guten Jahren auch keine Filtration.

Tasting note:

In der verführerischen Nase eine intensive Duftorgie mit Brombeeren, schwarzen Truffes, feinen Kokosnoten, Röstaromen, Vanille, Thymian und Koriander; wuchtig und eindrucksvoll präsentiert sich dann der Gaumen, wiederum viel dichte Beerenfrucht, kraftvoller Körper mit festen Tanninen ausgestattet, enorm lang anhaltendes Finale.
