Vinification:
Méthode champenoise, classic first fermentation in stainless steel tanks, followed by a second fermentation in the bottle and refinement on the lees for up to six years in the dark, chalky oak barrels of the oldest, still existing champagne house.
Tasting note:
Light green-yellow in colour, very fine, persistent mousse. Yellow apple fruit with a fine hint of biscuit, nuances of fresh quince, delicate hazelnut flavour, mineral touch. Full-bodied, good complexity, sweet yellow tropical fruit, nuances of peach and pineapple, delicate blossom honey on the finish, an elegant food companion, vinous and well persistent.
