Vinification:
Gentle pressing, organic acid fermentation in wooden barrels, ageing for 10 months.
Tasting note:
Notes of honey, candied orange and green pepper on the nose. On the palate, notes of lemon with the same green pepper and candied orange. An intense wine with a persistent, mentholated freshness.
Domaine Julian Brocard:
Julien took over the winery from his father in 1995. Since 2011, the winery has been run according to organic guidelines. The terroir for this wine consists of clay and limestone, interspersed with fossils.
The Domaine takes a non-interventionist approach to vinification, aiming to reveal the true character of the wines without any distortion.
