Vinification:

The 2013 wine year continued the glorious past of late harvests. After a cold and wet winter and a very cool and rainy spring, the warm and dry summer was particularly favourable for the quality of the grapes. Dom Pérignon takes its time. No less than 8 years pass before the Vintage reaches the vision of perfection. During this time, it matures slowly, stored in the bottle in cool cellars, always in contact with the yeast. In peace and care until it reaches the harmony that will characterise Dom Pérignon forever.

Tasting note:

Medium greenish yellow, golden reflections, fine, persistent mousseux. Fine roasted aromas, underlaid with fresh peach fruit, white nougat, a hint of lime zest, very inviting bouquet, candied grapefruit zest and green apple in the background. Good medium complexity, juicy, yellow tropical fruit, subtle extract sweetness, mineral core and fresh structure, ripe grapefruit nuances on the finish, already well developed and drinkable, an emphatically lively vintage.

Dom Pérignon:

Like no other, Dom Pérignon stands for prestige champagne par excellence. This is not only due to the fact that Dom Pérignon only produces vintage champagnes, but also to its history, or more precisely to Pierre Pérignon, known as Dom Pérignon, who was responsible for the economic supply of the monastery of Hautvillers Abbey from 1668. As wine production was one of the monastery's main sources of income, he was intensively involved in its production. His work was instrumental in developing the "Méthode Champenoise".
He realised that the quality of the wine increased through the use of different varieties; he was also the first to seal the bottles with a cork, which was secured to the neck of the bottle with cords. Today's winegrowers in Champagne still owe their knowledge of the importance of assemblage to him. The uniqueness of Dom Pérignon Vintages lies in the fact that their ageing process is not linear and uniform, but takes place in successive stages called "plénitudes". In these special moments, the wine has reached a peak of maturity and has gained more energy.
