Vinification:
Spontaneous fermentation with up to 24 months on the lees. Matured in wooden barrels from 225 to 4,000 litres.
Tasting note:
Smoky, rosemary, black cherry, cassis, earthy, beetroot. Full-bodied, with good substance, dense extract, delicate acidity, salty, slightly lemony, dark minerality, ripe tannins in large quantities with reserves for several years. Multi-layered, enigmatic, long.
Ziereisen Winery:
The vineyards on the Ziereisen estate are mainly situated on mountain and hillside sites, some of which are steep. The soils are limestone deposits from the Black Forest with loess. This ideal terroir gives Ziereisen's wines that certain something.
For HP Ziereisen, the work in the vineyard is the most important thing and the basis for good wine - in the cellar, he says he 'accompanies' the wine, nothing more.
Greatly reduced yields from vines that are often up to 30 years old and strict selection of the grapes are the basis for the remarkable quality of Ziereisen wines. In the cellar, Ziereisen wines are produced without chemical additives, are not filtered and are allowed to mature for an unusually long time. The spontaneously fermented wines at the Ziereisen winery are left to macerate for between 6 and 8 weeks and mature on the lees for up to 24 months. The light and fruity red wines mature in large wooden barrels, the stronger wines in barriques and the white wines in centuries-old barrels.
