Vinification:
All the grapes are harvested by hand and sorted on a conveyor belt so that only the best grapes are pressed. The must is then transferred to French oak barrels for fermentation. The juice is stirred every day to "nourish" the wine. It then matures in the barrels for 8 to 9 months.
Tasting note:
The "La Butinière Chardonnay" is best decanted for 30 minutes before serving at a temperature of 12°C. Pale yellow in colour with golden reflections, the nose reveals aromas of preserved fruit (apricot), white peach and grapefruit. The palate is balanced and develops a mineral style with soft notes of honey and delicate vanilla, with a very long finish.
Anne de Joyeuse:
The Anne de Joyeuse co-operative is named after a well-known 16th century figure, the Duke of Joyeuse, who was enfeoffed with the lordship of Limoux by Henry III. Over 3,000 hectares of vineyards are cultivated by 350 families for the co-operative.
