Vinification:
The Merlot, Cabernet Franc and Sauvignon grapes are harvested by hand and fermented in vats at controlled temperatures, which enhances the flavours of the Cabernets. The process ends with refinement in 225 litre wood.
Tasting note:
This wine expresses a great balance between the soft tannins of Merlot and the aromatic complexity of Cabernet Franc.
Collazzi:
The Collazzi winery is located just a few kilometres from Florence and has been owned by the Marchi family since 1933. It is an impressive 400-hectare estate, of which more than 25 hectares are planted with vines and 140 hectares with olive trees.
Since the mid-1990s, a reorganisation of the vineyards and the winery has given the estate a new lease of life. The olive trees are the second important component of the estate's production and are grown in a special culture to produce a valuable virgin olive oil of the highest quality.
