Vinification:
Selective and meticulous hand-picking, gentle fermentation, spontaneous if possible, manual immersion of the mash and use of a sieve variant (continuous immersion of the mash), long maceration time, manual scooping onto the press, transfer to the barriques using gravity only, BSA only in the following spring, followed by initial, moderate sulphurisation.
Ausbau für 12 Monate in französischen und zu einem kleinen Teil in österreichischen Barriques (Stockinger). Neuholz ca. 15%.
Tasting note:
Herrlicher Duft nach roten Früchten, schön eingebundene Tannine. Braucht noch etwas Zeit, mit zunehmender Belüftung vereinen sich Extrakt, Gerbstoffe und eine ausgewogene Säure zu einem harmonischen Ganzen. Grosses Reifepotential.
Vineyards:
Kalkhaltige, skelettreiche Böden mit Anteilen von Bündner Schiefer.

Uwe Schneider:
Ein Münchner welcher sich zum Weinakademiker ausbilden lässt? Nicht ganz alltäglich aber das ist Uwe Schneider ganz bestimmt nicht. Danach begann er beim begnadeten Thomas Mattmann vom Zizerser Weingut Cicero als Aushilfe zur Hand. Im zarten Alter von 40 Jahren entschied er sich, die Winzerlehre zu machen. Nach Mattmanns Tod wurde er Betriebsleiter bei Cicero bis zu dessen Auflösung.
Aktuell bewirtschaftet er nach biologischen Richtlinien Parzellen in Zizers. Gekeltert werden die Weine für sich und eine Handvoll Kunden in einem Torkel in Zizers. Er schöpft das volle Potential des Terroirs. Das Resultat sind hervorragende Weine, wie der Pinot Noir „Felder“ und der Chardonnay.
Bündner Herrschaft:
Often referred to as the "Burgundy of Switzerland", this wine-growing region regularly produces top wines that enjoy worldwide recognition. Pinot Noir and Chardonnay are particularly noteworthy.
80 per cent of the vineyards in the Bündner Herrschaft (approx. 400 hectares) are planted with red grape varieties, mainly Pinot Noir, which thrives particularly well on the limestone and slate soils of the Herrschaft. The conditions for Pinot Noir are absolutely outstanding. Permeable gravel, sand and slate soils, interspersed with limestone, prevail here.
The topography is ideal, and the high day-night temperature differences further enhance the elegance of the wines. During the day, the weather in the Herrschaft is characterised by plenty of sunshine and often strong foehn winds. This allows the grapes to ripen perfectly, but at night it gets quite cold due to the downdraughts from the mountains, with high temperature differences to the hot days. The berries retain their acidity thanks to this night-time coolness and the wines are not too rich.
Due to this special microclimate, Herrschäftler Pinot Noirs appear somewhat cooler than those of Burgundy, are racier and finer and less full and dense.
