Falstaff: 97 points
Robert Parker: 94 points
Alcohol content: 13% vol.
Grape varieties: 100% Chardonnay
Vinification:
Hand-picked, spontaneously fermented with natural yeasts. Ageing: 18 months in small oak barrels
Tasting note:
Medium yellow-green colour, silver reflections. Fine herbal spice, candied grapefruit, a hint of hazelnut, smoky, underlaid with fine yellow fruit. Full-bodied, fine white fruit, tightly woven, dark notes, piquant acidity structure, in a certain way sparse, extremely reduced to minerality, extremely taut and precise, great future potential.
Sabathi Winery:
The Sabathis' philosophy is based on the understanding that terroir is not only created by climate and soil, but also by human cultivation. Their natural soil management, the support of plant health and the exclusive use of their own vineyard yeasts allow the wines to express the terroir unadulterated. The Pössnitzberg, with its long history and unique soil composition, is the heart of their vineyards and perfectly embodies the flavours and styles typical of the region.
