Vinification:
Vinification traditionally in open barrels, malolactic fermentation. Maturation takes place for 10 to 12 months in oak barrels (35 % new wood).
Deugstationsnotiz:
The Aloxe-Corton Les Chaillots has a deep garnet red colour in the glass. The nose has a fine aroma of cherries and nutmeg, delicately spicy. On the palate, it delights with a great abundance of wild berries, raspberries, liquorice and coffee. The finish is incredibly fresh.
Domaine et Maison Latour:
Today, the 11th Latour generation is already running the wine trade and winegrowing business. The management of the family business is always passed on to the first-born - and for eight generations he has always had the first name Louis.
Today, no fewer than seven domaines mainly vinify grapes from the Côte d'Or, but also from Chablis, Beaujolais and the south of France.
Maison Louis Latour is the only company in Burgundy to produce all of its own pièces (wooden barrels) in its own cooperage. Wines from over 100 AOCs are matured in around 3500 barrels. Louis Latour's wines are elegant and fragrant. The focus is less on concentration and more on elegance.
