Vinification:
Alcoholic fermentation in concrete tanks at a controlled temperature, followed by a 15-day maceration in concrete. Malolactic fermentation in large, used French oak barrels.
Matured in barriques for approx. 24 months, 20 % first fill, 80 % second fill. Subsequent bottle ageing for 6 months.
Tasting note:
Ruby red in colour, the nose has a complexity that gives us notes of flowers and ripe fruit, accompanied by the unmistakable black pepper. Blackberry and black cherry jam on the palate.
Vallepicciola:
The soul and heart of Vallepicciola are located in the ancient lands of Chianti Classico, areas with a mild microclimate and the incomparable charm of Castelnuovo Berardenga, Siena. Vallepicciola covers 265 hectares, of which 65 hectares are vineyards and a further 40 hectares were planted by 2019. In addition to international grape varieties such as Pinot Nero, Merlot and Cabernet Sauvignon, the traditional Sangiovese is cultivated, which is mainly intended for the production of Chianti Classico, Cabernet Franc, Petit Verdot and Chardonnay.
