Vinification:
Harvest and selection by hand. Each variety and parcel is harvested and vinified separately. Malolactic fermentation takes place in barriques. Matured in barriques for 18 months.
Tasting note:
Intense ruby red colour with a violet hue. Expressive on the nose, lots of blackcurrant, pepper and a hint of hibiscus. Concentrated on the palate, impressive tannin structure, vibrant acidity, spicy, lingering finish.
Collazzi:
The Collazzi winery is located just a few kilometres from Florence and has been owned by the Marchi family since 1933. It is an impressive 400-hectare estate, of which more than 25 hectares are planted with vines and 140 hectares with olive trees.
Since the mid-1990s, a reorganisation of the vineyards and the winery has given the estate a new lease of life. The olive trees are the second important component of the estate's production and are grown in a special culture to produce a valuable virgin olive oil of the highest quality.
