Vinification:

Produced using the traditional method. Bottle fermentation on yeasts for 26 months. After disgorging, a 6-month refinement in the bottle follows.

Tasting note:

It is a lively, fragrant brut that favours suppleness and an accessible sensory language, a balanced and versatile style. In the glass, it has a straw-yellow colour with greenish reflections, enlivened by a fine and persistent perlage. The bouquet is fresh, with floral notes of lime, hints of citrus fruit, white peach and green pepper. On the palate, it is taut and crisp, fresh and vertical, flavoursome, refined and with a very pleasant, persistent finish.

Falstaff: Bright greenish-yellow with silver reflections. Balsamic and floral tones, not too fine-pearled carbonic acid, enveloping and creamy development, spicy and citrusy finish.

Contadi Costaldi:

The Contadi Castaldi winery was founded in the late 1980s in the beautiful Franciacorta region. Covering an area of 160 hectares, the winery produces around 1,300,000 bottles a year.

The name comes from the combination of the terms "Contadi" and "Castaldi", which encompasses the thousand-year history of Franciacorta and an old oven, the "Fornace Biasca", which was acquired by Vittorio Moretti and his wife Mariella. In the Middle Ages, the Contadi were small territorial units that took care of excellent agricultural production, while the Castaldi were the lords entrusted with the administration of the land.

The Contadi Castaldi tradition is as dynamic, lively and contemporary as it is deeply connected to its roots.
