Vinification:

The base wines, which are mainly based on Pinot Meunier, are matured on the lees with plenty of lees. They are clarified by slow sedimentation before the second fermentation takes place in the bottle. The reserve wines for the Grande Reserve come from a Réserve perpetuelle, which was started in 1998.

Tasting note:

The bouquet presents itself fresh and delicious with notes of oranges, ripe pears and blossom honey, wonderfully carried by a yeasty spicy aroma that documents the fine ageing in oak; on the palate elegant body with aromas of sweet spices such as cinnamon and vanilla as well as a hint of white pepper, the intense minerality gives the wine a special lustre.

Domaine Dehors:

Around three per cent of the vineyards in Champagne are cultivated by so-called "Propriétaire Récoltants". This is the name given to those winegrowers who do not sell their grapes to the big houses, but instead press their own champagne from them. These winegrowers control the entire production process of their own champagne and can therefore develop their very own style. Jerome Dehours is one such independent Champagne winemaker who is the third generation to preserve his family heritage. As Jerome Dehours, unlike the big champagne houses, does not have to maintain a worldwide marketing machinery and sales organisation, at Jerome Dehours we simply pay for the wine. There are no labelled flûtes, closures, ice buckets, thick glossy brochures or free bottles, which are ultimately included in the price by the big champagne houses. Jerome Dehours' champagne itself takes centre stage - and we think quite rightly so.
