Vinification:
Manual harvesting and sorting. Slow pneumatic pressing. No destemming or mashing. Pre-clarification by gravity in the cold room and regular stirring of the yeast. Maturation for 6 months (25% barrique, 75% tanks).
Tasting note:
Intensely aromatic - the nose reveals notes of small white fruits and develops into delicious summer fruit flavours reminiscent of peach, apricot or melon jam. Delicate notes of citrus peel emphasise the bouquet.
Wonderfully creamy - the palate seduces with its richness of fruit, its freshness and its balance.
For optimum enjoyment, we serve the Clos des Lunes "Lune d'Argent" 2018 at 10 °C.
Clos de Lunes:
Located on the left bank of the Garonne, 40 kilometres south of Bordeaux, the vineyards of Sauternes are legendary. Sauternes enjoys a worldwide reputation and has no fewer than twenty-six 1855 Classified Growths.
Olivier Bernard decided to write a new chapter on this ancient terroir, which is known above all for its sweet wines of remarkable quality, in 2011. Together with the Domaine de Chevalier team, he decided to produce some of the best dry white wines.
A mosaic of five terroirs
The soils that make up the terroir of Sauternes consist of deep, well-aerated coarse gravel in the higher areas and red clay in Barsac. They lie on a clay-limestone subsoil into which the old vines sink their roots.
Olivier Bernard has planted the Clos des Lunes on this soil, which offers remarkable freshness. The marvellous expressive diversity of the terroir is evident in each of the wines.
Among other advantages, Clos des Lunes benefits from excellent natural drainage thanks to its hillside location and an omnipresent underground water network. Both together ensure an excellent water balance, which is reflected in the high density of the vineyards.
