Vinification:
Mash fermentation at a controlled temperature and subsequent maturation in barriques for 12-14 months.
Tasting note:
The wine is a cuvée of the Manto Negro, Callet, Merlot, Cabernet Sauvignon and Syrah varieties. It matures for twelve to fourteen months in French oak barrels and has a strong ruby colour with elegant garnet hues. The flavours of spices, dried fruit, fennel and liquorice stand out. The wine is rounded off by the flavour of ripe fruit and a fine wood aroma.
Binigrau Winery:
The winery is located in Biniali. State-of-the-art technology is used to produce the wines, while traditional manual labour is maintained.
The vines themselves and the entire production process are subject to a system of environmentally friendly and ecological treatment, which endeavours to increase the quality of the grapes while respecting the natural development of the plant and the natural balance of the environment.
Cultivation is carried out with organic methods, using the ancient system of biodynamics for cultivation, pruning and harvesting.
