Vinifiaktion:
Spontaneous fermentation as whole bunch in open wood and lagares. Malo and ageing on the lees in 600 litre tonneaux and in large wood.
Tasting note:
The Pino 2022 was produced from Bobal grapes from one hectare of 40-year-old vines on limestone soils. With the idea of achieving a more serious, age-worthy red wine, it was fermented in 4,500-litre oak barrels and matured in a 3,500-litre oval oak foudre. It has an alcohol content of 13.5 %, good acidity and freshness with the usual parameters for the grape variety (pH 3.57 and 5.7 grams of acidity). This was the more reductive of the 2022s I tasted; the wine is more austere and appears more rustic on the palate, but it was bottled just two months before my tasting. In August 2023, 4,000 bottles were bottled.

In the south-east of Spain, in the Manchuela region, the passionate winemaker Juan Antonio Ponce produces incredibly impressive, finesse-rich wines according to biodynamic guidelines. Mainly from the predominant grape variety here, Bobal, which has achieved international fame thanks to Ponce.
