Vinification:
Vinified in steel tanks, then aged for 24 months in new and used American and French barriques.
Tasting note:
A fascinating wine with a stimulating interplay of flavours of black fruit, cherry, tobacco and ripe blackberries on the palate. The finish shows a strong backbone with present tannins. With such class, it is no wonder that San Román is enjoying unrivalled popularity! The late harvest takes place in late autumn to give the grapes the ideal ripening time. Bottling takes place after 24 months of ageing in old French and American oak barrels.
Bodegas San Roman:
San Román Bodegas y Viñedos is the Toro counterpart to Mauro and is also under the technical management of Eduardo García, who is always advised by his father Mariano. The Garcías have been involved in Toro since the late 1990s and are among the most important driving forces in the region. Almost 90 hectares of old vines, 70 of which they own, ensure first-class grapes.
Eduardo harvests quite early, ferments slowly at low temperatures and is even more restrained when it comes to maceration times. In contrast, he generally ages his top wine San Román for longer in barriques and uses American and French oak. The family has broken new ground with its second wine, Prima. More fruit and less weight make this Toro unusually lively and agile.
