Vinifiaktion:
Destemming and gentle pressing of the grapes. Fermentation and maceration in stainless steel tanks for 2 weeks. Then aged for 2 years in small American barriques, where malolactic fermentation also takes place. The wine is bottled in May and then matured for a further two years in the bottle to develop its full harmony.
Tasting note:
Intense cherry red colour with chimney red reflections in the glass. Complex on the nose with nuances of dark fruit, blackberry, plum, vanilla and fine roasted flavours in the background. Full-bodied and fruity on the palate, with liquorice, clove and fine tannins. Delicious finish with a roasted coffee flavour.
Excellent with game, savoury and spicy meat dishes and mature cheese.
Jean Leon:
Cabernet Sauvignon, Cabernet Franc and Chardonnay have been cultivated on the estate since 1963. The estate, with a vineyard area of 60 hectares, is run in the classic Bordeaux style, with individual vineyards being consistently vinified. The estate switched to organic viticulture in 2008 and was certified in 2012.
