Vinifcation:

Von Hand gelesen und anschliessende Spontangärung im Edelstahltank. Ausbau in gebrauchten und neuen Barrique für 12 bis 14 Monate. Die Unplugged-Weine werden, wie es der Name formuliert, ohne jeglichen Schnickschnack, aber mit viel Gefühl für den Takt der Natur produziert. Das heisst: keine Reinzuchthefen für die Gärung, keine Enzyme, keine Schönungsmittel und in guten Jahren auch keine Filtration.

Tasting note:

Tiefdunkles Rubingranat, opaker Kern, violette Reflexe, zarte Randaufhellung. Feinwürzig unterlegte Kirschfrucht, reife Zwetschken, ein Hauch von Edelholz und Nougat. Kraftvoll, fruchtsüsse Textur, präsente, gut integrierte Tannine, zart nach Brombeeren und Lakritze im Abgang, mineralischer Touch, schokoladiger Nachhall, gutes Reifepotenzial.
