The Hirsch family winery is located in Kammern in Kamptal, not far from the famous Heiligenstein and Gaisberg vineyards. Working with nature instead of fighting against it: the Hirsch family has been successfully following this credo for decades, which has led them to the current biodynamic cultivation of all vineyards. Hirsch is also considered a pioneer of the screw cap. He was one of the first Austrian winegrowers to use only the screw cap up to the top line. In 2011, Johannes Hirsch was named Winemaker of the Year by Falstaff.

Vinification:
Whole-cluster pressing, fermentation with natural yeast, matured both in stainless steel tanks and in large oak barrels.
Tasting note:
Bright golden yellow, silver-coloured reflections. Fine tobacco-herb spice, some flint, yellow tropical fruit, delicate honeydew melon, nuances of candied citrus fruit. Juicy, good complexity, taut, well-integrated acidity structure, delicate peach, white toffee in the aftertaste, taut, inviting food companion, lingers well, multi-layered and multi-faceted, a kind of Austro-Le-Montrachet.
