Vinification:

Spontaneous fermentation in barriques. Maturation, 9 months in barriques, 6 months in steel tanks.

Tasting note:

Complex nose: roasted nuts and smoky notes, plus notes of citrus marmalade, kumquat and herbal-spicy hints. Dense on the palate, juicy acidity, beautiful interplay between mellowness and minerality. Finishes long with salty hints.

Falstaff: Complex fruity and spicy bouquet with notes of citrus, mirabelle plum and green damson. Hints of popped grain and fennel as well as a touch of black cumin. On the palate, fresh acidity, lots of citrus and yellow fruit. The meagreness is absorbed by the melting texture. Long mineral finish.
