Vinification:
The ageing technique of the wines is as simple and natural as possible, with the greatest possible preservation of the characteristics of the different grape varieties. Each variety is vinified separately and, depending on the grape variety, plot and vintage, requires different lengths of time for fermentation and ageing in oak without prior clarification. For Lupicaia and Castello del Terriccio, new 500 litre oak barrels, called tonneaux, are used, which are then used two years later for the ageing of Tassinaia. Lupicaia and Castello del Terriccio rest in tonneaux for around 22 months, Tassinaia for 16 months. The blend is then created for each wine. Each individual wine has sufficient time to mature, both in wood and in the bottle, with each additional year giving the wine even more potential for development.
Tasting note:
Intense, bright ruby red-violet colour. Opens with slightly earthy tones of sour cherry, cloves and smoke. Full-bodied and dense on the palate, showing ripe, densely woven tannins, coating the palate, firm pressure on the finish.
