Vinification:

Manual harvest when the grapes are optimally ripe. The freshly pressed must is then chilled for 5 to 7 days to accentuate the fruit flavours. The subsequent alcoholic fermentation lasts 15 to 18 days and malolactic fermentation usually begins in early December. The wine matures for 9 months before being bottled.

Tasting note:

Very beautiful, pale yellow colour with green reflections. The typical Chablis nose reveals notes of peach, banana, citrus fruit and a hint of bread crust. Balanced, fresh acidity and elegant on the palate. Very beautiful, long-lasting finish with notes of ripe fruit, vanilla and minerality.

The geological heart of the Chablis wine region lies on a layer of marine sediments, algae and shells that formed 155 million years ago and is known as the Kimmeridgium. This unusual, iodine-rich geology is transmitted through the roots to the Chardonnay and gives the Chablis wines their unique identity.

The Chardonnay matures in Chablis under optimal conditions. The semi-continental climate ensures a perfect balance between sugar richness and savoury freshness.
