Vinification:
This white wine is made from a selection of the best Sauvignon Blanc varieties. After the grapes have been harvested and pressed, fermentation takes place in stainless steel tanks at a maximum temperature of 18°C. The young wine does not undergo acidification. The young wine does not undergo acid degradation. A small proportion of Sémillon is then added (fermented separately in barriques).
Tasting note:
Strong straw yellow colour. Intense, fruity aromas: grapefruit, elderflower, pears and gooseberries. On the palate, the wine is multi-layered, with notes of stone fruit, white flowers and fresh grass. There is also an elegant hint of exoticism. The finish is harmonious and carried by a well-supporting acidity structure.
Castello della Sala:
Castello della Sala is located in Umbria, close to the border with Tuscany and about 18 kilometres from the ancient city of Orvieto. The lands of the castle, an imposing fortress from medieval times, cover 600 hectares, 200 of which are vineyards, halfway between the river Paglia and the summit of Monte Nibbio. 200 hectares of vineyards, planted with traditional grape varieties such as Procanico and Grechetto, but also with Chardonnay, Sauvignon Blanc, Sémillon, Pinot Bianco, Viognier and a small proportion of Traminer and Riesling, are situated at altitudes ranging from 220 metres to 470 metres.
The area of Castello della Sala is particularly suited to the production of white wines, but there is a special case: Pinot Nero finds the ideal conditions in this terroir to develop optimally. The area is characterised by soils that tend to be clayey, vineyards that are well oriented towards the sunrise and excellent day-night temperature differences, and the morning mist plays an important role in the ripening of the grapes.
