Vinification:
Vinification takes place in steel tanks (18 to 25 days). Depending on the vintage, ageing in barriques (2/3 new wood) takes 15 to 30 months.
Tasting note:
Rich, sparkling ruby colour with a slightly light rim. Opens with a clear, deep nose of plums and blackberries, with subtle smoky notes and a hint of cardamom. Firm and full-bodied on the palate, shows lots of dense tannins, builds up firm pressure, lots of plums, long finish.
Castellare di Castellina:
Like many Tuscan wine estates, Castellare di Castellina is picturesquely situated amidst vineyards and olive groves. The Milanese publisher Paolo Panerai acquired the feudal estate in the 1970s out of a passion for the Chianti region. With great care, attention to detail and a high awareness of quality, he led the production site to the top of Tuscany.
