Vinification
The vines for this wine grow in a side valley south-west of Greve in Chianti. They are over 80 years old and therefore produce a very low yield. Further selection of the grapes guarantees the top quality of this wine. After fermentation, the young wine is matured for twelve months in new 350-litre French oak barrels and refined for a further six months in the bottle. Around 25,000 bottles are produced each year!
Tasting note:
Dark ruby red colour. On the nose, initially candle wax, bacon, then incense, cherries, wild berries, then some resin and pine needles, lots of toast. Juicy on the palate, with a very savoury entry and finish, but very toasted on the palate, on light malt, still very young, put it away and forget it.
Podere Poggio Scalette:
Star oenologist Vittorio Fiore has certainly been one of the best winemakers in Italy for over 30 years. His speciality is undoubtedly Sangiovese. When Vittorio discovered this winery and the outstanding Carbonaione vineyard near Ruffoli (Greve in Chianti) in 1991, he immediately fell in love with the ancient, terraced vineyards. The vines of the original "Sangiovese di Lamole" clone are more than 80 years old.
Fiore wanted to create a wine that was an expression of both the Sangiovese grape and the outstanding terroir. His son Jurij assists him in this endeavour. The Carbonaione is aged for around 14 months in French oak tonneaux with a capacity of 350 litres.
