Vinification:
The ageing technique of the wines is as simple and natural as possible, with the greatest possible preservation of the characteristics of the different grape varieties. Each variety is vinified separately and, depending on the grape variety, plot and vintage, requires different lengths of time for fermentation and ageing in oak without prior clarification. For Lupicaia and Castello del Terriccio, new 500 litre oak barrels, called tonneaux, are used, which are then used two years later for the ageing of Tassinaia. Lupicaia and Castello del Terriccio rest in tonneaux for around 22 months, Tassinaia for 16 months. The blend is then created for each wine. Each individual wine has sufficient time to mature, both in wood and in the bottle, with each additional year giving the wine even more potential for development.
Tasting note:
Intense, bright ruby red-violet colour. Opens with slightly earthy tones of sour cherry, cloves and smoke. Full-bodied and dense on the palate, showing ripe, densely woven tannins, coating the palate, firm pressure on the finish.
Castello del Terriccio:
Castello del Terriccio is one of the largest agricultural estates in Tuscany: the total area of around 1,500 hectares, with 65 hectares of vineyards and 40 hectares of olive groves, is located in the northern part of Maremma Tuscany not far from Bolgheri. The soil, air and light form a unique microcosm, a harmony of man and nature, a balanced interplay of different crops and spontaneous vegetation.
The landscape is breathtakingly beautiful: alongside the vineyards are forests of Turkey oaks, cork oaks and holm oaks, eucalyptus trees and Mediterranean scrub, which enrich the landscape with their colours and scents. Fields, meadows and small country houses stretch all the way to the sea. The variety of streams and the lake that collects them guarantee the water supply for fauna and flora.
