Vinification:

Harvested by hand and then fermented spontaneously in INOX stainless steel tanks. This Merlot is matured in used and new barriques. His "unplugged" wines are produced, as he puts it, "without any frills, but with a lot of feeling for the rhythm of nature". This means: no pure yeasts for fermentation, no enzymes, no fining agents and, in good years, no filtration.

Tasting note:

The seductive nose is an intense orgy of aromas with blackberries, black truffles, fine coconut notes, roasted flavours, vanilla, thyme and coriander; the palate is powerful and impressive, again lots of dense berry fruit, powerful body with firm tannins, enormously long-lasting finish.
