Vinification:
Elaborate hand-picking, 5-8 days of cold maceration, open maceration in wooden vats, manual punching down of the fermenting mash 1-2 times/day, gentle pressing, ageing in French barriques (approx. 30% new wood) for 12 months.
Tasting note:
Fine notes of dark fruits such as blackberries, plums and cherries on the nose, accompanied by a subtle hint of wood. A soft attack on the palate, followed by plenty of ripe fruit and elegant spice, finishing with finely polished tannins, elegance and great length.
Winery von Salis:
Motivated by his enthusiasm for good wines, Andrea Davaz founded von Salis AG with two friends in 1994. For 30 years now, we have been passionate about wine and have sought out the best wines from all over the world for our customers. Over the years, we have been able to recruit over 25 highly trained employees who keep track of our constantly growing range of wines in Landquart and in the Maienfeld wine shop. We source the grapes for our own wines from over 60 winegrowers in Fläsch, Maienfeld, Jenins, Malans, Zizers and Trimmis.
The Graubünden grapes that make our von Salis wine something very special grow on more than 50 hectares there. We also cultivate around two hectares of our own vines in the Bündner Herrschaft region. As not only regionality but also nature is important to us, we pay close attention to our ecological responsibility in all processes. In addition, we not only want to produce the best wines, but also sustainably promote our unique Bündner Herrschaft region in all its diversity so that many more generations can enjoy good wines.
