Vinification:
According to tradition, the Pinot Noir is fully fermented into a red wine and then mixed with a small proportion of Chardonnay. This not only creates the beautiful rosé colour, but also adds structure to the champagne. The assemblage is followed by bottle fermentation according to the méthode champenoise with subsequent maturation on the fine lees.
Tasting note:
Medium salmon pink colour, golden reflections, fine mousseux. A hint of ripe heart cherries, delicate hints of red forest berry confit, candied orange zest. Medium complexity, fine fruit sweetness, elegant, harmonious, shows good freshness, mineral in the aftertaste, stays well on the palate, a multifaceted begelitre at the table.
