Vinification:
Hand-picked and destemmed - Total duration of maceration and fermentation: 23 days.
Malolactic fermentation in barriques.
Matured for 18 months, 12 of which in barriques.
Tasting note:
An explosive nose of black fruits, supported by a noble wood side. Lively and dynamic in the mouth. An intense and persistent wine with a beautiful tannic mass.
Benoit Dorsaz:
Benoît Dorsaz comes from a family of winegrowers and grew up among the vines. In 1986, Benoît inherited a plot of Chasselas. From then on, he leased his family's vineyards and, with the help of his wife Maryline, began replanting the vineyard and renovating and expanding his father's cellar.
Little by little, the winery is being expanded in just the right way to ensure an efficient, artisanal business run by a married couple.
Each plot is carefully monitored and the vines thrive within a framework that is respectfully defined by the winemaker.
