Vinification:

After years of ageing, the yeasts have formed their sediment. They are the mothers of the wine, the sediment that is removed during disgorgement so that each bottle is perfectly clean. It is the final moment when the bottle is uncorked and sealed with the final cork, and this is how cava and wine arrive at the table of every consumer. The date of disgorgement is indicated on all AGUSTÍ TORELLÓ MATA bottles: this is the most important information to know when the ageing in the cellar is complete. The vintage, disgorgement date and ageing time are indicated on the label. In short, the best moment to savour it.

Tasting note:

This Agustí Torelló is a large reserve cellar with a minimum ageing period of 30 months in the cellar. 40% of the base wine from which it is made has been aged for 8 months in French oak barrels. It is a sparkling wine that combines tradition and modernity, barrel and stainless steel, contrast and vigour.

Agustí Torelló Mata was a pioneer who founded his own winery in 1959. Since then, his name has been synonymous not only with cavas, but also with sparkling wines of great quality. The Cava building is located in Sant Sadurní d'Anoia, but the grapes used to make the wines come from different regions of the Penedès, all of which contribute to the complexity of the Catalan terroir. Agustí Torelló has created a range of exquisite and particularly expressive wines that express the local character with the greatest elegance, out of the deepest respect for the land and history and emphasising the traditional grape varieties.
