Vinifcation:
Harvested by hand and then fermented spontaneously in stainless steel tanks. Matured in used and new barriques for 12 to 14 months. As the name suggests, the unplugged wines are produced without any frills, but with a lot of feeling for the rhythm of nature. This means: no pure yeasts for fermentation, no enzymes, no fining agents and, in good years, no filtration.
Tasting note:
Deep dark ruby colour, opaque core, violet reflections, delicate edge brightening. Finely spiced cherry fruit, ripe plums, a hint of precious wood and nougat. Powerful, fruity-sweet texture, present, well-integrated tannins, delicate hints of blackberries and liquorice on the finish, mineral touch, chocolaty aftertaste, good ageing potential.
