Vinification:

The Gräba Chardonnay comes from a single vineyard in the village of Fläsch, which is vinified separately. The vines, which are almost 40 years old, are deeply rooted in mineral-rich soils and benefit from a particularly warm microclimate. The grapes are fermented in French barriques and then aged on the fine lees for ten months, predominantly in used barriques. Contact with the lees lends the wine additional complexity, depth and elegance.

Tasting note:

The Chardonnay grapes come from vines in the Fläscher Feld that are around 30 years old. Following gentle pressing, fermentation takes place in French barriques. The wine is then aged on its fine lees for ten months. Regular stirring of the lees during the first few months enhances its complexity and body, whilst imparting an elegant, creamy texture.

Davaz Winery:

The Davaz winery is an established name in the Bündner Herrschaft region and has a long tradition: the first vines were planted in a prime location in Fläsch back in 1972. This laid the foundation for the success story of Davaz wines. In order to dedicate themselves even more to the vineyard and to be close to it, the parents Hans and Annemarie moved with their five children directly to the newly built vineyard settlement between Fläsch and Maienfeld. With a great deal of passion and commitment, it didn't take long for the wines to develop from insider tips to absolute top wines. The loyal clientele grew steadily. Micha and Luca - the sons of Andrea and Marianne Davaz - are now the third generation to work in the business, ensuring that tradition, values and craftsmanship are carried into the future.
