Vinification:

Autochthonous Timorasso grape variety, harvested by hand, cold macerated overnight and then gently pressed. Gentle fermentation for four weeks in various containers made of stainless steel, large wooden barrels and ceramic. The white wine matures in these containers for 10 months on the fine lees, which are regularly stirred (battonage).

Tasting note:

Golden yellow colour, intense and complex aroma of ripe pears, quinces, peaches in combination with floral nuances. On the palate, it has a good body with moderate alcohol and good acidity. The yellow-fruity flavour is accompanied by a mineral note that intensifies after around five years of ageing in the bottle.
