Vinification:

The Cuvée Blanc combines three grape varieties – Blanc de Noir, Pinot Blanc and Sauvignon Blanc – each of which is vinified separately. The grapes are selectively harvested by hand, gently destemmed and carefully pressed before the must is naturally clarified and fermented at around 18 °C in stainless steel tanks. The young wines are initially aged on the fine lees before the individual components are blended into the final cuvée in the following year. A further period of ageing on the fine lees, together with gentle filtration and bottling in the spring, lend the wine additional depth, harmony and expression.

Tasting note:

The Cuvée Blanc impresses with its expressive, fruit-driven aroma, which immediately conveys freshness and approachability: ripe yellow fruits blend with subtle exotic hints of mango, lending the bouquet a lively, slightly playful note. On the palate, the wine is slender and pleasantly light, underpinned by precise, fresh acidity. Delicate floral nuances emphasise its elegant style, whilst its dry character ensures clarity and a clean structure. The refreshing, balanced finish harmoniously rounds off the overall impression, making this cuvée an uncomplicated yet stylish white wine that impresses with its lightness and refined precision.

Salis’s own wines are produced in close collaboration with over 60 winegrowers from Fläsch, Maienfeld, Jenins, Malans, Zizers and Trimmis. The grapes that give our wines their distinctive character thrive across more than 50 hectares of vineyards. This is complemented by around two hectares of our own vines in the Bündner Herrschaft.
