Vinification:

Autochthone Rebsorte Timorasso, wird Hand gelesen , über Nacht kalt mazeriert und danach sanft gepresst. Schonende Vergärung während vier Wochen in verschiedenen Behältern aus Edelstahl, grossem Holzfass und Keramik. In diesen Gefässen reift der Weisswein für 10 Monate auf der Feinhefe, sie wird regelmässig aufgerührt (Battonage).

Tasting note:

Goldgelbe Farbe, intensives und komplexes Aroma von reifen Birnen, Quitten, Pfirsichen in Kombination mit floralen Nuancen. Am Gaumen zeigt er einen guten Körper mit moderatem Alkohol und guter Säurestruktur. Das gelbfruchtige wird von einer mineralischen Note begleitet, die sich nach etwa fünf jähriger Flaschenreifung intensiviert.
