Vinification:

Alcoholic fermentation takes place in stainless steel tanks. Once this is complete, the wine is kept at a low temperature to prevent malolactic fermentation and preserve its sensory characteristics unaltered.

Tasting note:

Delicate red berries, pomegranate and floral notes characterise the bouquet, accompanied by a cool, mineral freshness. The effervescence is delicate and persistent, underpinned by crisp acidity and a dry, straightforward finish. Pairs well with raw fish, shellfish or delicate starters with a Mediterranean influence.

Castello della Sala is situated in Umbria, near the border with Tuscany and about 18 km from the ancient town of Orvieto. The estate of the castle, an imposing medieval fortress, covers 600 hectares, 229 of which are vineyards, situated halfway between the River Paglia and the summit of Monte Nibbio.
