Vinification:
The grapes are harvested by hand, destemmed and then pressed. The must ferments in stainless steel tanks at a controlled temperature of 25-28°C for 12-14 months. During this phase, the must is frequently re-infused and thus enriched with the noble tannins for which the bush-grown Carignano is so famous. After malolactic fermentation, the wine is transferred to small French oak barrels in first or second passage, where it matures for 10-12 months.
Tasting note:
On the nose, the wine reveals a multi-layered spectrum of aromas ranging from leather and blackberry to liquorice. On the palate, the wine is incredibly full-bodied and concentrated with a perfectly developed style. Even the finish is incredibly rich and harmonious, making this wine the perfect accompaniment to Mediterranean cuisine.
Santadi:
The Cantina Santadi winery is located in the Sulcis region, in the south-west of Sardinia, just a few kilometres from the beautiful beaches and white dunes of Porto Pino.
Three hundred small farmers, who on average own just one and a half hectares of vines, are advised by experts from the cooperative. One of the most important foundations of Santadi's current success is its commitment to indigenous grape varieties. The realisation that nothing expresses the beauty of the southern Sardinian landscape, its subtropical climate and the warmth of the local people better than Vermentino, Nuragus or Carignano. In addition, this ensures the livelihood of the farmers in southernmost Sardinia and prevents rural exodus.
