Vinification:

Before fermentation, the grapes are left to dry on straw mats for several weeks to concentrate. The wine is matured for 24 months in French oak barriques

Tasting note:

The bouquet is highly concentrated, extremely complex, pure chocolate, cinnamon, cigar box and a truckload of sweet berries; on the palate black cherries, herbs, graphite, again lots of cocoa, juicy body with lots of muscle, broad and fierce right into the intoxicating finish.

Zymé:

The history of the Zýmē winery begins long before its actual creation. Celestino Gaspari, oenologist and winemaker from San Pietro in Cariano near Verona, worked for his father-in-law Giuseppe Quintarelli - one of the forefathers of Amarone - for around 17 years. It was not until 2003 that he founded his own Azienda Agricola - named after the Greek word for yeast "Le Zýmè". Today, the winery uses grapes from 9 hectares of vineyards, some of which come from the Gaspari family and others from selected owners of other vineyards who work closely with Zýmē. The wines are characterised by a variety of vineyards and grape varieties. For example, the flagships of the new Veneto Rosso, "Harlequin" and "Kairos", are the result of at least 15 varieties, including four white varieties, some of which have almost disappeared. The "60 20 20", on the other hand, speaks the global language of Cabernet Sauvignon, Cabernet and Merlot, while the "Valpolicella" and "Amarone" are produced in the classic style.

The Graubünden grapes that make our von Salis wine something very special grow on more than 50 hectares there. We also cultivate around two hectares of our own vines in the Bündner Herrschaft region. As not only regionality but also nature is important to us, we pay close attention to our ecological responsibility in all processes. In addition, we not only want to produce the best wines, but also sustainably promote our unique Bündner Herrschaft region in all its diversity so that many more generations can enjoy good wines.
